Gluten-Free Stuffed Chicken Breast

Ingredients

4 organic skinless, boneless chicken breast halves

freshly ground black pepper

1 small bunch of organic spinach leaves

4 slices of cheese (I use Oxford’s Harvest by local Gunn’s Hill)

4 slices of bacon (I use our homemade smoked bacon)

1/2 tsp. no MSG seasoning salt

4 tsp. organic butter

toothpicks

Directions

Preheat oven to 350F.

Pound chicken breasts to 1/4-inch thickness.

Sprinkle each piece of chicken on both sides with pepper. Place 1 slice of cheese, 1 piece of bacon and a small bunch of spinach on top of each portion. Roll up each breast, and secure with a few toothpicks. Place in a baking dish, and sprinkle chicken evenly with seasoned salt. Place 1 tsp. of butter to the top of each piece of chicken.

Bake for approximately 45 minutes and check with a meat thermometer if cooked thoroughly. Serve immediately.
