INGREDIENTS:
1 lb. ground grass-fed beef
1 lb. ground grass-fed turkey
1 lb. Hungarian grass-fed pork sausage
1 onion, chopped
1 egg, beaten
1 tbsp. chopped fresh parsley
1 tbsp. dried Italian spices
1 tsp. sea salt
6 slices of grass-fed bacon
DIRECTIONS:
Combine all ingredients (except bacon) until mixed well. Shape into equal sized balls, and place on a plate.
In a frying pan, cook bacon and remove. Add the meatballs and cook in the frying pan until both sides are brown.
At this point, we usually eat half of the batch! Then the remainder I put in the fridge and save for tomorrow’s pasta dinner. For this dinner, I add the remainder of the meatballs to my tomato sauce and slowly boil for 20 minutes until the tomato sauce has thickened. I add chopped vegetables to the sauce once I have sautéd them in olive oil (spinach, onion, garlic, red pepper, mushrooms) and mix with cooked organic corn spaghetti noodles.
*I have also modified this recipe by adding 1/4 cup or more of cornmeal to the meatballs before frying. This adds a crispy texture which tastes very good!
