I dried some corn we grew last year and ground it into flour. I like the idea of having my own flour, as I know the corn was grown without any pesticides/fertilizers and there are no preservatives in it.
This cake is a nice sweet treat! Healthier than store bought cake with many preservatives. You can substitute the sugar with honey or stevia.
Corn Flour Cake
INGREDIENTS
1 cup corn flour, sieved
1/4 cup sugar
1/4 cup icing sugar
1/2 cup butter melted
1 teaspoon baking powder
1 egg
1/4 cup goat’s milk (you can use cow’s milk/almond milk)
1 teaspoon vanilla
DIRECTIONS
Preheat oven to 340F.
Prepare a 9×9 cake pan with a little butter on the bottom and sides.
Beat vanilla, butter and both sugars well, add the egg and continue beating until nice and creamy. Mix in the corn flour and baking powder and slowly add the milk, mix gently until combined and then beat well again.
Pour into pan and bake for approximately 40 minutes or until a toothpick poked into the middle comes out clear.
Serve warm.
